短命的4天飯店工作筆記part1.
1.{動物性鮮奶油1罐(1000c.c.)+鮮奶1罐(1000c.c.)+糖200g}煮至小滾(鍋邊冒泡)離火
ps.加糖後要持續同方向攪拌至糖完全溶解
2.將18片吉利丁片(冷水泡軟)加入
3.稍冷加入白蘭地少許
4.灌模冷藏
ps.吉利丁的多寡會影響口感,個人對軟硬的偏好可以在配方上作微調
